Farm to Early Childhood – Welcome to the Kitchen! Deb Norris

This course will introduce participants to the Cafeteria/Kitchen part of the 3 C’s model of Farm to Early Childhood Education (FTEC). The course will provide an overview of child nutrition and explore environmental, policy, and programmatic factors which support the development of children’s healthy eating behaviors. Course topics will include child nutrition, cooking with children, early educator roles and best practices, Child Adult Care Food Programming (CACFP), food procurement, menu and recipe generation, values and policy development, and community resources supporting food security.
